- 1/4 tsp cumin seeds
- 200 g skyr or plain yoghurt
- 1/2 tsp hot chilli powder
- Herb Chutney
- 100 g fresh coriander
- 4 tbsps fresh lemon juice
- 4 green chillies
- 20 g mint leaves
- 50 g pistachios
- good pinch salt
Instructions to make to make Krunchy Kicks
- Pani puri. Add the semolina, flour, baking powder and salt and mix well. Add water 1 tablespoon at a time and knead to a smooth dough. It should take around 10 minutes to achieve a smooth and elastic dough. Cover with damp cloth and set aside for 30 minutes.
- Herb chutney. Blitz all the ingredients until blended but still with a crunch.
- Roast the cumin seeds, let cool and blend. Whisk the skyr with the chilli powder, salt and the roasted cumin.
- Knead the dough again for 5 minutes and cut into 2. Grease the rolling pin and work surface and take 1 part of the pastry and roll out until 2mm in diameter. Cut into small circles using a pastry cutter or cup and layer in a damp cloth. Repeat with other piece, rolling and cutting.
- Heat the oil over medium heat. Add the puris one at a time. They will puff up and rise to the surface in a few seconds. Flip when a golden colour. Take out and drain on absorbent paper.
- To assemble place a couple of cubes of potato and a few chickpeas in each pastry case, top with tamarind, herb chutney, skyr and top with a sprinkling of sev and chaat masala.
